Description

This Asparagus Frittata boasts irresistible flavor with crispy bacon, fresh asparagus, and creamy eggs. Ideal for a quick dinner or a healthy breakfast that brings comfort to your table.


Ingredients

  • 6 large eggs
  • ½ cup cream or milk
  • ⅓ cup grated parmesan cheese
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 3 strips thick bacon, diced
  • 1 cup asparagus, chopped into 1-inch pieces
  • 1 cup broccoli florets, chopped into 1-inch pieces
  • ½ cup sweet or yellow onion, minced


Instructions

  1. Preheat the oven to 350℉ (175℃) and position a rack in the center.
  2. In a bowl, whisk together eggs, cream or milk, grated parmesan, kosher salt, and pepper.
  3. Cook the diced bacon in a skillet over medium-high heat until crispy. Set bacon aside on paper towels.
  4. Remove excess grease from the skillet, leaving one tablespoon. Sauté asparagus, broccoli, and onion in the skillet until crisp-tender, about 4-5 minutes.
  5. Sprinkle the bacon over the sautéed vegetables. Pour the egg mixture on top.
  6. Bake in the oven for 17-20 minutes until the frittata is set and slightly wobbly in the center.
  7. Let the frittata cool for 5-10 minutes before slicing and serving.

Notes

Feel free to substitute other vegetables based on your preferences or what’s in season.
For added flavor, consider using fresh herbs like dill or parsley.
