- 6 large eggs
- ½ cup cream or milk
- ⅓ cup grated parmesan cheese
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- 3 strips thick bacon, diced
- 1 cup asparagus, chopped into 1-inch pieces
- 1 cup broccoli florets, chopped into 1-inch pieces
- ½ cup sweet or yellow onion, minced
Instructions
- Preheat the oven to 350℉ (175℃) and position a rack in the center.
- In a bowl, whisk together eggs, cream or milk, grated parmesan, kosher salt, and pepper.
- Cook the diced bacon in a skillet over medium-high heat until crispy. Set bacon aside on paper towels.
- Remove excess grease from the skillet, leaving one tablespoon. Sauté asparagus, broccoli, and onion in the skillet until crisp-tender, about 4-5 minutes.
- Sprinkle the bacon over the sautéed vegetables. Pour the egg mixture on top.
- Bake in the oven for 17-20 minutes until the frittata is set and slightly wobbly in the center.
- Let the frittata cool for 5-10 minutes before slicing and serving.
