  • 4 boneless thick-cut pork chops (about 8 ounces each and ¾-inch thick)
  • kosher salt and ground black pepper, to taste
  • 2 teaspoons brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • ½ cup barbecue sauce


Instructions

  1. Preheat your oven to 350°F and prepare a rimmed baking sheet lined with parchment paper or foil for easy cleanup.
  2. Pat the pork chops dry with a paper towel to ensure a good sear.
  3. Mix brown sugar, smoked paprika, chili powder, onion powder, and garlic powder in a small bowl.
  4. Rub this seasoning blend generously on both sides of the pork chops and season with kosher salt and black pepper.
  5. Heat vegetable oil in a large skillet over medium-high heat until shimmering, then add the pork chops and brown for 3-5 minutes on each side.
  6. Transfer the browned pork chops to your prepared baking sheet and baste with half of the barbecue sauce on the tops and sides.
  7. Bake uncovered for 9-14 minutes, or until the chops reach an internal temperature of 145°F, basting with the remaining sauce halfway through. For a caramelized exterior, broil for the last 2-3 minutes.
  8. Allow the pork chops to rest for 5-10 minutes before serving.
