Description

Bourbon Chicken offers irresistible flavor with tender chicken, savory sauce, and an easy cooking method, making it a perfect choice for a quick and satisfying meal.


Ingredients

  • 2 1/2-3 lb boneless skinless chicken breasts cubed into 3/41-inch pieces
  • 3 tbsp cornstarch plus additional as needed to thicken
  • 1/2 tsp salt
  • 1/4 tsp lemon pepper
  • 3 tbsp vegetable oil , olive oil or peanut oil plus additional as needed to fry
  • 2 cloves garlic minced
  • 1 cup apple juice
  • 1 cup chicken stock or chicken broth
  • 1/3 cup low sodium soy sauce
  • 1/3 cup ketchup
  • 1/4 cup bourbon
  • 1 tbsp rice wine vinegar or apple cider vinegar
  • 2/3 cup packed light brown sugar
  • 1/2 tsp onion powder
  • 1/2 tsp ground ginger
  • 1/2-1 tsp crushed red pepper flakes
  • 3 medium green onions for garnishing thinly sliced
  • cooked basmati or jasmine rice for serving


Instructions

  1. Toss chicken pieces with cornstarch, salt, and lemon pepper until evenly coated.
  2. Heat oil in a large skillet over medium-high heat and add chicken in a single layer.
  3. Brown the chicken for 1 to 1 1/2 minutes per side, then remove to a platter and repeat until all chicken is browned.
  4. In the skillet, add minced garlic and cook for 1 minute. Then add apple juice, chicken stock, soy sauce, ketchup, bourbon, vinegar, brown sugar, onion powder, ginger, and red pepper flakes, stirring to combine.
  5. Add the browned chicken back into the skillet and stir until coated in sauce. Reduce heat to medium-low, simmer uncovered for 15-20 minutes until chicken is cooked through and sauce thickens slightly.
  6. Serve immediately over rice, garnished with sliced green onions.
  7. To thicken sauce, mix cornstarch with cold water, add to the sauce, and stir until thickened.

Notes

Feel free to adjust the amount of crushed red pepper flakes for desired spiciness.
This dish pairs wonderfully with fluffy basmati or jasmine rice.
You can substitute bourbon with additional apple juice or chicken stock if preferred.
