Description

Ingredients

  • 8 slices brioche bread 3 days stale, cut into 1-inch thick slices
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs room temperature
  • 1 cup cream room temperature
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, whisk together the sugar, cinnamon, nutmeg, eggs, cream, and vanilla extract until everything is well combined and smooth.
  2. Transfer the mixture to a baking dish and arrange the bread slices to soak. Let each piece soak for about 1-2 minutes on both sides, ensuring absorption without sogginess.
  3. Preheat a griddle or large non-stick skillet over medium heat. Melt the butter in the skillet.
  4. Place the soaked bread slices on the skillet and cook for 2 to 3 minutes on one side until golden brown. Flip and cook the other side for about 2 minutes until it reaches a similar golden hue.
  5. Serve warm with extra butter, a drizzle of maple syrup, and a side of berries and whipped cream.

Notes

Stale brioche is recommended for better absorption of the mixture without falling apart.
For a richer flavor, let the soaked bread sit for a few minutes before cooking.
