These Caramel Brownies are an irresistible treat, with rich chocolate, a gooey caramel center, and an easy preparation that makes them perfect for gatherings or a sweet cravings fix.

- 210g unsalted butter
- 210g dark chocolate
- 3 medium eggs (50g each)
- 280g caster sugar
- 100g plain flour
- 50g cocoa powder
- 1 tsp vanilla
- 30g golden syrup
- 1/2 tsp salt
- 240g caramel chocolate (2 bars of cadbury caramel chocolate)
- 50g icing sugar
Instructions
- Preheat the oven to Gas mark 4/180°C/160°C Fan and line a 9-inch baking tin with parchment paper.
- Melt the butter and dark chocolate together in the microwave in short bursts, stirring until smooth, then let cool slightly.
- In a separate bowl, whisk the sugar and eggs on high for 10 minutes until light and fluffy.
- Pour the cooled chocolate mixture into the egg mixture and mix on low speed until combined.
- Add in the vanilla, golden syrup, and sifted flour, cocoa powder, and salt, folding gently until just combined. Avoid over-mixing.
- Pour half of the brownie batter into the prepared tin, spread evenly, and lay the caramel bars on top. Cover with the remaining batter.
- Bake for 30-35 minutes, until the edges are set and the center is still slightly soft.
- Refrigerate for 3-4 hours or preferably overnight for best texture.
- Lift the brownies out of the tin, slice them into squares.
- For decoration, place a heart-shaped cut-out on top, dust with icing sugar, and carefully remove the stencil.
Notes
Allow the brownies to cool completely before slicing for neat squares.
Refrigerating the brownies enhances their fudginess and flavor.
They can be served warm with a scoop of ice cream for a delightful treat.
