Description

This Cashew Chicken Stir Fry features tender chicken, fresh broccoli, and crunchy cashews all tossed in a delectable sauce. Perfect for a quick and satisfying meal at home!


Ingredients

  • 1.5 lb chicken tenderloins cut into bite-sized pieces
  • 1 large head of broccoli
  • 1 pouch microwaveable jasmine rice or leftover rice
  • ⅓ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 tbsp rice wine vinegar
  • 3 tbsp brown sugar
  • ½ tbsp garlic powder
  • ½ tbsp ginger
  • ¼ cup water
  • 1 tbsp cornstarch
  • 1 cup unsalted cashews
  • sesame seeds toasted for garnish


Instructions

  1. Cut the chicken tenderloins into 1-inch pieces and place them in a medium bowl.
  2. In a small bowl, whisk together soy sauce, sesame oil, rice wine vinegar, garlic powder, ginger powder, and water.
  3. Pour half of the sauce over the chicken and let it marinate for 5 to 10 minutes. Save the rest for later.
  4. While the chicken marinates, cut the broccoli into small florets.
  5. Heat a large skillet over medium heat and add about ½ tablespoon olive oil. Add the chicken and cook for about 3 minutes per side until cooked through. Remove from the skillet and set aside.
  6. Add the broccoli to the same skillet and sauté for 2 to 3 minutes. Add a splash of water if needed to lightly steam and prevent burning.
  7. Whisk the cornstarch into the reserved sauce until smooth. Pour the sauce into the skillet with the broccoli. Stir and let it thicken.
  8. Add the cashews and cooked chicken back into the pan. Toss everything together and cook for an additional minute, until coated.
  9. Microwave the jasmine rice according to package directions.
  10. Serve the stir-fry over rice and enjoy.

Notes

You can substitute chicken with tofu for a vegetarian option.
Feel free to add your favorite veggies like bell peppers or snap peas.
Adjust the sweetness by varying the amount of brown sugar used.
