Description

Cashew Chicken delivers mouthwatering flavors with tender chicken pieces coated in a savory sauce and crunchy cashews. This easy-to-make dish is perfect for a quick dinner or a tasty meal anytime!


Ingredients

  • 1 pound chicken breast boneless and skinless, cut into bite-size pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup corn-starch
  • ¾ cup cashews whole, unsalted
  • 2 tablespoons cooking oil
  • 4 cloves garlic minced
  • 1 tablespoons hoisin sauce
  • 1 tablespoons sesame oil
  • 1 tablespoons brown sugar
  • ¼ cup soy sauce
  • ½ cup water


Instructions

  1. In a bowl, combine the chicken pieces with salt and pepper, then mix well. Add the corn starch and coat the chicken evenly.
  2. In a separate bowl, mix together all the ingredients for the sauce.
  3. Heat a large, heavy-bottomed pan and roast the cashews over medium-high heat for 5 minutes, then set aside to cool.
  4. In the same pan, heat the cooking oil over medium-high heat until smoking. Add the corn-starch-coated chicken in a single layer and cook until golden brown on both sides.
  5. Add the roasted cashews and the sauce to the pan, tossing to coat the chicken evenly. Cover and cook for 5 minutes on medium heat until the sauce thickens.
  6. Garnish with spring onion, sesame seeds, and chili flakes if desired.
  7. Serve hot, ideally with rice and steamed broccoli.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking.
Feel free to add more vegetables like bell peppers or snap peas for a colorful dish.
To make it spicier, add some red pepper flakes or Sriracha to the sauce.
