- 1 cup ground walnuts from 1 heaping cup pieces
- 48 walnut halves for tops
Instructions
- Preheat the oven to 350°F and line large baking sheets with parchment paper.
- In an electric mixer, combine softened butter, granulated sugar, brown sugar, vanilla extract, and salt. Beat on high until light and fluffy for 3 to 5 minutes.
- Grind walnut pieces in a food processor until fine, taking care not to overprocess.
- Once the butter mixture is fluffy, scrape down the bowl. Mix in all-purpose flour and ground walnuts at low speed. Then, add mini chocolate chips until just combined.
- Scoop 1-ounce balls of dough using a cookie scoop and place them on the baking sheets, 2 inches apart.
- Press a walnut half onto the top of each dough ball, flattening it slightly.
- Bake for 15 to 18 minutes, checking at 15 minutes. Cookies should be slightly golden on the edges and just firm in the center; let cool on the baking sheets.
