Ingredients
Scale
- 6 tablespoons salted butter, divided
- 2 onions, halved and thinly sliced
- 1 lb. ground beef
- 1 ½ teaspoons worcestershire sauce
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper
- 6 tablespoons mayonnaise
- 2 tablespoons ketchup
- 2 teaspoons sweet pickle relish
- 8 slices rye bread (or substitute sourdough)
- 4 large slices sharp cheddar cheese (or substitute swiss)
Instructions
- In a medium skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook, stirring occasionally, until soft and golden brown, about 25 to 30 minutes. Remove from heat and set aside.
- In a large bowl, mix together ground beef, Worcestershire sauce, kosher salt, and black pepper. Shape the mixture into 4 thin oval patties, approximately 6 inches by 4 inches each.
- In a large cast iron skillet, melt 1 tablespoon of butter over medium-high heat. Cook 2 patties until well browned on both sides and cooked through, about 2 minutes on each side. Transfer cooked patties to a plate. Repeat with an additional tablespoon of butter and the remaining patties. Wipe the skillet clean after cooking.
- In a small bowl, combine mayonnaise, ketchup, and sweet pickle relish. Mix well and set aside.
- To assemble the sandwiches, spread 1 tablespoon of sauce on one slice of bread. Layer with a slice of cheese, a beef patty, a few tablespoons of caramelized onions, and another tablespoon of sauce. Top with another slice of bread. Repeat the process for the remaining sandwiches.
- In the same skillet, melt 1 tablespoon of butter over medium heat and griddle 2 sandwiches until golden brown and the cheese melts, about 3 to 4 minutes per side. Transfer to a baking sheet and keep warm in a 200°F oven. Continue with remaining butter and sandwiches. Serve immediately.
Notes
For extra flavor, add a slice of pasteurized processed cheese to each sandwich along with cheddar.
Feel free to customize the sauce with your favorite condiments or spices to enhance the flavor of the patties.
