Description

This Dorito Casserole combines the savory taste of ground beef, cheese, and nacho soup with crunchy Doritos for a quick, comforting meal that’s perfect for any weeknight dinner.


Ingredients

  • 1 lb lean ground beef, or any ground meat of your choice
  • ½ cup chopped yellow onion
  • 1 (15 oz) can black beans, drained
  • 1 (14.5 oz) can fire roasted diced tomatoes, drained
  • 1 (10.75 oz) can fiesta nacho cheese soup
  • 1 cup corn, fresh, frozen, or canned (drain it!)
  • 1 (4 oz) can diced green chiles
  • ½ cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • 1 oz taco seasoning packet, hot or mild
  • 9 ¼ oz bag of nacho cheese doritos, crushed
  • 3 cups shredded cheddar cheese
  • 1 cup chopped tomatoes, or pico de gallo
  • ½ cup sour cream
  • ½ cup guacamole
  • 3 tablespoons freshly chopped cilantro


Instructions

  1. Preheat the oven to 350°F and grease a 9×13 casserole dish with non-stick spray.
  2. In a large skillet, cook the ground beef and onions for 7 to 10 minutes until cooked through; drain excess grease.
  3. Add black beans, fire-roasted tomatoes, nacho cheese soup, corn, green chiles, peppers, and taco seasoning. Stir and cook for 3 minutes before removing from heat.
  4. In the baking dish, layer half of the crushed Doritos, then half of the meat mixture, followed by half of the cheese. Repeat the layers, finishing with cheese on top.
  5. Bake for 15 minutes until heated through and cheese is melted. Allow to cool for 5 minutes, top with desired toppings, and serve.

Notes

Feel free to substitute any ground meat you prefer.
For extra crunch, consider adding more Doritos on top before serving.
