Description
This Dorito Casserole combines the savory taste of ground beef, cheese, and nacho soup with crunchy Doritos for a quick, comforting meal that’s perfect for any weeknight dinner.

- 1 lb lean ground beef, or any ground meat of your choice
- ½ cup chopped yellow onion
- 1 (15 oz) can black beans, drained
- 1 (14.5 oz) can fire roasted diced tomatoes, drained
- 1 (10.75 oz) can fiesta nacho cheese soup
- 1 cup corn, fresh, frozen, or canned (drain it!)
- 1 (4 oz) can diced green chiles
- ½ cup chopped red bell pepper
- ½ cup chopped green bell pepper
- 1 oz taco seasoning packet, hot or mild
- 9 ¼ oz bag of nacho cheese doritos, crushed
- 3 cups shredded cheddar cheese
- 1 cup chopped tomatoes, or pico de gallo
- ½ cup sour cream
- ½ cup guacamole
- 3 tablespoons freshly chopped cilantro
Instructions
- Preheat the oven to 350°F and grease a 9×13 casserole dish with non-stick spray.
- In a large skillet, cook the ground beef and onions for 7 to 10 minutes until cooked through; drain excess grease.
- Add black beans, fire-roasted tomatoes, nacho cheese soup, corn, green chiles, peppers, and taco seasoning. Stir and cook for 3 minutes before removing from heat.
- In the baking dish, layer half of the crushed Doritos, then half of the meat mixture, followed by half of the cheese. Repeat the layers, finishing with cheese on top.
- Bake for 15 minutes until heated through and cheese is melted. Allow to cool for 5 minutes, top with desired toppings, and serve.
Notes
Feel free to substitute any ground meat you prefer.
For extra crunch, consider adding more Doritos on top before serving.
