- 1 yellow onion
- 2 tablespoons butter unsalted
- salt & pepper to taste
- 2 tablespoons olive oil
- 2 lbs boneless, skinless chicken breast
- 1 packet french onion soup mix
- 1 can cream of mushroom
- 1 cup beef broth
- 2 cups shredded mozzarella cheese
Instructions
- Melt butter in a large skillet over medium-high heat, then add sliced onions and season with salt and pepper.
- Cook onions for 2-3 minutes, then add olive oil and chicken. Coat the chicken with the french onion soup mix and cook until no longer pink in the center, stirring occasionally.
- Whisk together cream of mushroom soup and beef broth. Once chicken is almost cooked, about 5-6 minutes, add broth and soup mixture.
- Bring to a boil, then reduce heat and simmer for 4-6 minutes.
- Turn off heat, top with shredded cheese, cover, and let sit until cheese is melted.
- Remove the lid, garnish with fresh parsley, and serve.
Notes
For extra flavor, add additional seasonings like garlic powder or thyme.
