Description

Grilled Baked Potatoes offer a tasty combination of creamy cheddar, crispy bacon, and fresh chives. These easy to prepare potatoes make for a perfect side dish or quick dinner option, bringing comfort and flavor to any meal.


Ingredients

  • 4-6 russet potatoes about 8 oz. each
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 6 oz. cheddar cheese shredded
  • sour cream
  • crumbled crispy bacon
  • sliced green onion
  • sliced chives


Instructions

  1. Preheat the grill to 350 degrees F.
  2. Scrub the potatoes thoroughly and pat them dry.
  3. Prick the potatoes with a fork on all sides.
  4. Place the potatoes on a microwave-safe plate and microwave on medium for 8 minutes.
  5. Allow the potatoes to cool for easier handling. Rub the skins with olive oil and season with kosher salt.
  6. Wrap each potato in aluminum foil, piercing the foil several times with a fork, then place them on the preheated grill.
  7. Close the grill lid and cook the potatoes for 45 minutes to 1 hour, until they are fork-tender.
  8. Remove the potatoes from the grill and let them cool for 2-5 minutes.
  9. Carefully open the foil packets and make a deep vertical slice on top of each potato, using a spoon to widen the indentation.
  10. Add your favorite toppings and serve.

Notes

For extra flavor, try adding garlic to the olive oil before rubbing it on the potatoes.
Ensure to pierce the potatoes well to allow steam to escape during cooking.
Experiment with different toppings like salsa or avocado for variety.
