Ingredients

  • 1 pound ground chicken
  • 1 each large egg lightly beaten
  • ¼ cup finely chopped green onions
  • 2 teaspoon minced garlic
  • ⅓ cup bread crumbs or panko for keto, pork rinds
  • ½ teaspoon sesame oil
  • 1 tablespoon soy sauce reduced sodium
  • 1 teaspoon ginger paste
  • salt to taste
  • ¼ cup soy sauce reduced sodium
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 tablespoon honey
  • 2 teaspoon minced garlic
  • 1 teaspoon ginger paste
  • 1 tablespoon sesame seeds and chopped green onions for garnish


Instructions

  1. In a mixing bowl, combine the meatball ingredients and gently knead until well mixed.
  2. Form the mixture into evenly sized meatballs.
  3. Place meatballs in the air fryer tray coated with cooking spray and spray the tops of the meatballs lightly.
  4. Set the air fryer to 400°F and cook for 10-12 minutes or until the internal temperature reaches 165°F, turning the meatballs halfway through.
  5. While meatballs cook, combine the sauce ingredients in a saucepan over medium heat.
  6. Bring to a simmer and cook until the sauce thickens slightly, then remove from heat to cool.
  7. Toss cooked meatballs in the sauce and garnish with sesame seeds before serving.

These meatballs freeze well, so consider making a double batch for later.
