- 1 pound rotini pasta uncooked
- ½ cup salami sliced
- 1 cup italian vinaigrette dressing
- 1 cup fresh mozzarella pearls
- 1 cup cherry tomatoes halved
- ½ purple onion thinly sliced
- ¼ cup pitted olives
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 orange bell pepper chopped
- 1 cup cucumber chopped
- ¼ cup parmesan cheese grated
- fresh parsley optional garnish
Instructions
- Bring a large pot of salted water to a boil.
- Cook rotini pasta according to package directions until al dente.
- Drain and rinse pasta under cold water to cool.
- In a large mixing bowl, combine the cooled pasta with salami, mozzarella pearls, vinaigrette, cherry tomatoes, onion, olives, salt, pepper, bell pepper, and cucumber. Mix well to combine.
- Top with grated Parmesan and a sprinkle of fresh parsley.
- Cover and refrigerate for 1 hour to chill before serving.
Notes
Feel free to add other vegetables like bell peppers or spinach for extra crunch.
This salad can be made a day ahead for better flavor.
You can substitute the rotini pasta with any pasta shape you prefer.
