Description

This Jammie Dodger Tray Bake combines the delightful crunch of Jammie Dodger biscuits with creamy white chocolate and a swirl of raspberry jam, making it an easy and mouthwatering dessert perfect for any occasion.


Ingredients

  • 300g jammie dodgers (finely crushed)
  • 90g unsalted butter
  • 90g condensed milk
  • 300g white chocolate
  • 300g condensed milk
  • 45g raspberry jam (decoration)
  • 9 mini jammie dodgers (decoration)


Instructions

  1. Line an 8×8-inch (20cm) square tin with baking paper and set aside.
  2. Blitz the Jammie Dodger biscuits in a food processor until fine crumbs form, then transfer to a bowl.
  3. Add melted butter and 90g of the condensed milk to the crumbs, stirring until a wet dough forms. Press this mixture into the base of the tin.
  4. Melt white chocolate and remaining condensed milk together in a heatproof bowl in the microwave, stirring until smooth.
  5. Quickly pour the melted mixture over the biscuit base and spread it evenly. Swirl in raspberry jam.
  6. Top with 9 mini jammie dodgers, either whole or crushed for texture.
  7. Refrigerate for at least 3 hours until firm, then cut into slices and serve.
