Description

These Lucky Charms Cookies are a delightful treat combining sweet flavors and nostalgic cereal. They’re easy to make, loaded with white chocolate and frosted for a fun twist on a classic dessert. Perfect for gatherings or a cozy snack!


Ingredients

  • 1 cup (2 sticks) unsalted butter softened
  • 1 cup granulated sugar
  • 2 tablespoon light brown sugar
  • 2 large eggs room temperature
  • 1 ½ teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • 3 tablespoon finely crushed lucky charms oat cereal pieces
  • 2 tablespoon finely crushed graham crackers
  • 2 tablespoon nonfat milk powder optional- see notes
  • 1 tablespoon cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup white chocolate chips

  • ¾ cups (1 ½ sticks) unsalted butter room temperature
  • 1 ¾ cups confectioners' sugar
  • 1 cup marshmallow fluff
  • 2 tablespoon heavy cream
  • 1 teaspoon vanilla extract
  • pinch salt


Instructions

  1. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, around 2-3 minutes.
  2. Add eggs one at a time, then mix in the vanilla extract.
  3. In another bowl, whisk together the flour, crushed graham crackers, crushed lucky charms, nonfat milk powder, cornstarch, baking powder, baking soda, and salt.
  4. Combine the dry ingredients with the wet ingredients until just mixed, being careful not to over-mix. Add in the white chocolate chips.
  5. Scoop ⅓ cup of dough, form into tall balls, and place them on a parchment-lined baking sheet. Press the tops down slightly. Chill in the fridge for 30 minutes while preheating the oven to 350°F.
  6. Bake for 12-16 minutes until edges are set and centers are slightly underdone.
  7. Allow cookies to cool in the pan for a few minutes before transferring to wire racks to cool completely.
  8. Once cooled, frost with marshmallow frosting, use a pastry bag for easy application. Top with Lucky Charms marshmallows and sprinkle with edible gold glitter, if desired.

Notes

Make sure to chill the dough for best results and to prevent spreading while baking.
Optional nonfat milk powder adds a creaminess but can be skipped without affecting the overall taste.
For extra fun, mix in colorful sprinkles with the dough before baking.
