- 2 3/4 cups all-purpose flour, spooned and leveled
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, at cool room temperature
- 1 3/4 cups granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tablespoon pure vanilla extract
- 1 1/4 cups mini m&m’s, plus more for pressing on top*
- 1/3 cup granulated sugar, for rolling cookies
Instructions
- Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- In a medium bowl, whisk the flour, cornstarch, baking soda, salt, and baking powder together. Set this mixture aside.
- In a stand mixer fitted with the paddle attachment, beat the butter at medium speed for 1 minute.
- Add 1 ¾ cups of granulated sugar to the butter and continue mixing until light and fluffy, about 2 minutes.
- Scrape down the bowl with a spatula and then add the egg, egg yolk, and vanilla extract, mixing until well incorporated.
- With the mixer off, add the dry ingredients to the bowl and mix on low speed until just combined.
- Gently fold in the mini M&M’s using a spatula, being careful not to overmix.
- Place the ⅓ cup of sugar in a small bowl. Form the dough into balls, approximately 2 tablespoons each, and roll in the sugar until fully coated.
- Arrange the cookie balls on the prepared baking sheet, spaced about 2 inches apart.
- Bake for 10 to 12 minutes or until the cookies crack on the surface; they should be soft in the center and slightly set around the edges.
- Remove from the oven and gently press additional M&M’s on top for decoration. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack.
Notes
For best results, use cool room temperature butter for a fluffy texture.
Don’t overbake the cookies to ensure they remain soft and chewy.
