- 1 cup cottage cheese full-fat or low-fat
- 2 very ripe bananas mashed
- 2 large eggs
- 1/3 cup oil or melted butter
- 1/4 cup sugar white, brown, or a mix – optional
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon optional
Instructions
- Preheat the oven to 350°F and grease or line a 9×5-inch loaf pan with parchment paper.
- Blend the cottage cheese until smooth using a blender or food processor to ensure a tender texture.
- In a large bowl, whisk together the blended cottage cheese, mashed bananas, eggs, oil or melted butter, optional sugar, and vanilla extract.
- In another bowl, stir together the flour, baking soda, baking powder, salt, and optional cinnamon.
- Add the dry ingredients to the wet ingredients and mix gently until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Make sure your bananas are very ripe for the best flavor.
Feel free to substitute the sugar with a sugar alternative if desired.
