Description

This Moist Cottage Cheese Banana Bread combines the creaminess of cottage cheese with ripe bananas for a flavorful and easy snack or breakfast option. Perfect for anyone looking for a comforting, homemade recipe!


Ingredients

  • 1 cup cottage cheese full-fat or low-fat
  • 2 very ripe bananas mashed
  • 2 large eggs
  • 1/3 cup oil or melted butter
  • 1/4 cup sugar white, brown, or a mix – optional
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional


Instructions

  1. Preheat the oven to 350°F and grease or line a 9×5-inch loaf pan with parchment paper.
  2. Blend the cottage cheese until smooth using a blender or food processor to ensure a tender texture.
  3. In a large bowl, whisk together the blended cottage cheese, mashed bananas, eggs, oil or melted butter, optional sugar, and vanilla extract.
  4. In another bowl, stir together the flour, baking soda, baking powder, salt, and optional cinnamon.
  5. Add the dry ingredients to the wet ingredients and mix gently until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure your bananas are very ripe for the best flavor.
Feel free to substitute the sugar with a sugar alternative if desired.
Store leftover banana bread in an airtight container at room temperature for up to 3 days.
