  • 1 cup light brown sugar
  • ½ cup white granulated sugar
  • 2 eggs, large
  • 1 cup old fashioned oats
  • 1 cup quick oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ cup salted butter, softened
  • 2 cups powdered sugar


Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, cream together the softened salted butter, light brown sugar, and white granulated sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in both types of oats until evenly mixed.
  5. In another bowl, combine the flour, baking soda, and baking powder; gradually add to the oat mixture until well incorporated.
  6. Drop rounded tablespoons of the dough onto a baking sheet lined with parchment paper, leaving space between them for spreading.
  7. Bake in the preheated oven for 12-15 minutes or until lightly golden brown. Allow to cool completely.
  8. Meanwhile, for the filling, beat the softened butter with powdered sugar until smooth and creamy.
  9. Spread the filling between two oatmeal cookies to create sandwiches.

Notes

For a chewier texture, use more old fashioned oats.
