Description

This prosciutto-wrapped chicken recipe brings together savory flavors and fresh ingredients. It’s easy to prepare and makes for a delightful, healthy meal that everyone will love.


Ingredients

  • 2 chicken breasts
  • 2 oz. goat cheese
  • ¼ cup baby spinach
  • 2 tablespoons parmesan cheese
  • 10 slices prosciutto
  • 2 tablespoons vegetable oil


Instructions

  1. Place a chicken breast in a heavy-duty ziplock bag, leaving it open, and pound with a meat mallet until thin. Repeat with the second chicken breast.
  2. Lay the flattened chicken breasts on a clean surface. Add goat cheese and spinach to the center of each piece.
  3. Roll the chicken tightly around the filling and secure with cooking twine. Repeat with the second chicken breast. Chill in the fridge for 15 minutes or up to a couple of hours.

Notes

For added flavor, marinate the chicken in balsamic vinegar before wrapping.
Ensure the chicken is tightly rolled to prevent the filling from spilling out during cooking.
Use fresh spinach for the best flavor and texture.
