- 2 chicken breasts
- 2 oz. goat cheese
- ¼ cup baby spinach
- 2 tablespoons parmesan cheese
- 10 slices prosciutto
- 2 tablespoons vegetable oil
Instructions
- Place a chicken breast in a heavy-duty ziplock bag, leaving it open, and pound with a meat mallet until thin. Repeat with the second chicken breast.
- Lay the flattened chicken breasts on a clean surface. Add goat cheese and spinach to the center of each piece.
- Roll the chicken tightly around the filling and secure with cooking twine. Repeat with the second chicken breast. Chill in the fridge for 15 minutes or up to a couple of hours.
Notes
For added flavor, marinate the chicken in balsamic vinegar before wrapping.
