- 3 pounds yukon gold or red potatoes – peeled and chopped into 1-inch pieces
- 1 cup chicken broth or veggie broth
- 1/3 cup unsalted butter cut into small pieces
- 4 cloves garlic minced – or 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 cup sour cream or plain greek yogurt
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup cream warmed – more if needed

Instructions
- Place the chopped potatoes and broth into the slow cooker and add butter, garlic, and onion powder on top.
- Cover and set the slow cooker to high; let the potatoes cook for 3-4 hours until tender.
- Once cooked, mash the potatoes with a masher or electric mixer to your preferred texture, leaving some chunks for mouthfeel.
- Incorporate sour cream, salt, and pepper. Adjust seasoning and blend in warm cream until you achieve the desired creaminess.
- Serve immediately with green onions and an extra pat of butter on top.
Notes
For additional flavor, try using roasted garlic instead of raw.
