Ingredients
Scale
- 4 tablespoons (56g) unsalted butter
- 2 cups (240g) all-purpose flour
- ¼ cup (32g) cornstarch
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 ½ cups (360ml) buttermilk
- ¾ cup (180ml) milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your waffle maker.
- Melt the butter and let it cool slightly.
- In a large bowl, combine the flour, cornstarch, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, crack the eggs and add the buttermilk, milk, and vanilla. Whisk until mixed, then whisk in the melted butter slowly.
- Pour the wet mixture into the dry ingredients and whisk lightly until combined.
- Cook the waffles according to the manufacturer's instructions until they are crisp and golden brown. They're done when only a bit of steam is escaping from the waffle iron. Serve immediately or keep warm in a 200°F oven on a cooling rack until ready.
Notes
For a lighter texture, do not overmix the batter; a few lumps are okay.
Feel free to add your favorite toppings like syrup, fruit, or whipped cream for extra flavor.
Storing leftover waffles in a freezer is easy; simply reheat in a toaster for a quick breakfast!
