  • 4 tablespoons (56g) unsalted butter
  • 2 cups (240g) all-purpose flour
  • ¼ cup (32g) cornstarch
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ½ cups (360ml) buttermilk
  • ¾ cup (180ml) milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your waffle maker.
  2. Melt the butter and let it cool slightly.
  3. In a large bowl, combine the flour, cornstarch, sugar, baking powder, baking soda, and salt.
  4. In a separate medium bowl, crack the eggs and add the buttermilk, milk, and vanilla. Whisk until mixed, then whisk in the melted butter slowly.
  5. Pour the wet mixture into the dry ingredients and whisk lightly until combined.
  6. Cook the waffles according to the manufacturer's instructions until they are crisp and golden brown. They're done when only a bit of steam is escaping from the waffle iron. Serve immediately or keep warm in a 200°F oven on a cooling rack until ready.
