Description

These Banana Muffins are a delightful treat that combines the sweetness of ripe bananas with the richness of Greek yogurt.   • 1 ¾ cups white whole wheat flour (or regular whole wheat flour, whole wheat pastry flour, or all-purpose flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon (optional)
  • 3 mashed bananas (very brown and spotty for best flavor)
  • 1/4 cup melted butter (or melted coconut oil)
  • 1/4 cup pure maple syrup
  • 1 egg
  • 1/2 cup milk
  • ½ cup plain Greek yogurt (full fat recommended)
  • 2 teaspoons vanilla extract
  • 1 cup mini chocolate chips (optional)


Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  2. In a larger bowl, mix the mashed bananas, maple syrup, Greek yogurt, egg, melted butter, and vanilla until smooth.
  3. Pour the dry ingredients into the wet ingredients and stir until just combined, being careful not to overmix.
  4. Set aside 1/4 cup of mini chocolate chips for topping. Fold the remaining chocolate chips into the batter gently.
  5. Divide the batter evenly among muffin cups, filling them almost to the top. Top with reserved chocolate chips if desired.
  6. Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and continue baking for 12-17 minutes. Muffins are done when a toothpick inserted in the center comes out clean.
  7. Remove from the oven and transfer the muffins to a cooling rack.

Notes

Ensure bananas are very ripe for the best flavor.
Do not overmix the batter to maintain fluffy muffins.
