Description

This dish combines sweet potatoes with a savory filling of ground beef, black beans, and spices. It’s an easy dinner option that’s packed with flavor and nutrition!


Ingredients

  • 4-6 sweet potatoes
  • 2 tablespoons olive oil
  • ½ cup yellow onion, diced
  • ¼ cup red bell pepper, diced
  • 1 jalapeno, deseeded and diced
  • 1 pound lean ground beef
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon oregano
  • 1 can (15 ounces) black beans, drained and rinsed
  • ½ cup frozen corn
  • 1 cup canned fire roasted diced tomatoes
  • ⅔ cup water
  • 1 cup shredded cheese, optional for serving
  • serve with green onions, avocado, sour cream or your favorite taco toppings


Instructions

  1. Preheat the oven to 425°F. Wash and dry the sweet potatoes. Prick the potatoes with a fork and place them on a lined baking sheet. Bake for about 60 minutes until soft.
  2. With 20 minutes remaining in baking, heat olive oil in a skillet over medium heat.
  3. Once the oil is hot, add the onion, bell pepper, and jalapeno. Cook until softened, about 5 minutes.
  4. Add the ground beef to the skillet, breaking it into small pieces. Brown the meat, stirring occasionally, and drain any excess fat.
  5. Stir in the garlic, salt, pepper, chili powder, cumin, and oregano. Cook while stirring for about 1 minute.
  6. Mix in the black beans, corn, diced tomatoes, and water. Cook until the liquid has mostly evaporated.
  7. After the potatoes are cooked, cut them in half and stuff with the beef mixture.
  8. If desired, top with cheese and broil for 2-3 minutes to melt the cheese.
  9. Add any additional toppings of your choice and serve.

Notes

Feel free to add more vegetables to the beef mixture, such as zucchini or spinach.
For a vegetarian option, substitute ground beef with lentils or mushrooms.
