Description

These Cadbury Mini Egg Cookie Bars offer a delightful mix of chocolate flavors with an easy preparation method. Perfect for any occasion, they combine chewy cookie goodness with bits of mini eggs for a mouthwatering treat.


Ingredients

  • 2 ¼ cup all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup salted butter, softened at room temperature
  • 1 cup brown sugar
  • ⅔ cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 ½ cups Cadbury Mini Eggs, roughly chopped


Instructions

  1. Preheat the oven to 350°F and prepare your baking dish with nonstick spray or parchment paper.
  2. In a small bowl, mix together the flour, cornstarch, baking soda, and salt until combined.
  3. In a larger bowl, cream together the softened butter and both sugars for about 2 minutes until fluffy using a hand mixer.
  4. Add the eggs and vanilla to the mixture, and blend on medium speed for 1 minute.
  5. Gradually add half of the dry ingredients, mixing on low speed. Scrape down the sides, then incorporate the remaining dry ingredients until fully combined.
  6. Fold in the chocolate chips and most of the chopped mini eggs, reserving about ¼ cup for later.
  7. Spread the dough evenly in the prepared baking dish using an offset spatula. Sprinkle with the reserved mini eggs on top.
  8. Bake in the preheated oven for 22-25 minutes. They’re done when golden on top and a toothpick comes out mostly clean.
  9. Allow the bars to cool in the pan for 30 minutes before slicing and serving.

Notes

Make sure to let the bars cool completely for easier cutting.
You can adjust the amount of mini eggs according to your preference.
