Ingredients

  • 4 boneless skinless chicken breasts trimmed of excess fat
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 3 cloves garlic finely minced
  • 1 tbsp ginger paste
  • 13.66 oz can coconut milk
  • 2 tbsp cornstarch
  • 1/4 cup fresh cilantro chopped
  • 1 tbsp lime zest


Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides of the chicken with salt, pepper, and paprika.
  3. Heat olive oil in a skillet over medium heat.
  4. Add the seasoned chicken breasts and cook until golden brown on both sides.
  5. In a separate bowl, combine lime juice, honey, garlic, and ginger paste.
  6. Pour this mixture over the chicken in the skillet.
  7. Add coconut milk and bring to a simmer.
  8. Mix cornstarch with a little water and add to the skillet to thicken the sauce.
  9. Cook until the sauce has thickened and the chicken is cooked through.
  10. Garnish with fresh cilantro and lime zest before serving.

Notes

For extra flavor, marinate the chicken in lime juice and spices for 30 minutes before cooking.
Serve with rice or vegetables for a complete meal.
Feel free to adjust the sweetness by adding more or less honey.
