- 1 tablespoon olive oil
- 1 small white onion, finely diced
- 1 pound lean ground beef
- 14.5 ounces black beans, one can, drained & rinsed
- 3-4 garlic cloves, minced
- 2 tablespoons tomato paste
- ½ cup beef broth
- 1 ½ taco seasoning
- 1 small red onion, thinly sliced
- 3 tablespoons vinegar, apple cider or white
- 3 tablespoons warm water
- 1 pinch kosher salt
- 8 small flour tortillas, corn tortilla works
- 1 cup cherry tomatoes, halved or quartered
- 1 cup shredded romaine lettuce
- 1 cup shredded cheese
- Lime wedges
- Jalapeno, thinly sliced
Instructions
- To make the quick-pickled red onion, combine vinegar, warm water, kosher salt, and sliced red onion in a small bowl. Allow it to sit for at least 15 minutes.
- In a large pan, heat olive oil over medium heat. Add the diced white onion and sauté until soft and golden, approximately 5 minutes.
- Incorporate the ground beef, taco seasoning, and minced garlic into the pan. Cook while breaking up the meat with a spoon until it begins to brown.
- Once browned, mix in tomato paste and beef broth, scraping the bottom of the pan to incorporate all the flavors. Let it simmer for 3-5 minutes until slightly thickened.
- Stir in the black beans and heat for an additional 2-3 minutes until warmed through.
- Adjust seasoning with salt and pepper according to your taste.
- Prepare your taco assembly with all ingredients on hand.
- Fill each flour tortilla with the beef and bean mixture, topping them with cherry tomatoes, shredded lettuce, pickled red onion, and shredded cheese. Optional garnishes include lime wedges and jalapeno slices.
Notes
Feel free to substitute corn tortillas for flour if you prefer.
Add additional toppings like avocado or sour cream for extra flavor.
