- 1 small onion, finely grated
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- ½ teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon olive oil

Instructions
- Preheat the oven to 400°F.
- In a large bowl, mix together the ground meat, grated onion, minced garlic, spices, salt, and olive oil until thoroughly combined and slightly sticky.
- Place the meat mixture on a sheet of parchment paper and cover with another sheet on top.
- Roll the meat into a thin, even rectangle using a rolling pin. Remove the top sheet of parchment paper.
- Carefully roll the meat tightly into a log shape, using the bottom parchment paper for assistance. Transfer the rolled meat onto a baking tray.
- Bake for 20 minutes until fully cooked. After baking, collect the juices from the tray and set aside. Tear or slice the meat into doner-style pieces and spread them out on the tray.
- Drizzle the reserved juices over the meat and place under the broiler for 5-8 minutes, turning as needed for crispiness. Remove and serve immediately.
Notes
For added flavor, consider marinating the meat overnight before cooking.
