  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 16 ounces elbow noodles, whole wheat or regular (~4 cups)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded swiss cheese
  • ¼ cup grated parmesan cheese
  • ¼ cup milk, + more if needed to thin
  • ¼ cup sour cream, optional


Instructions

  1. Add 4 cups of low-sodium chicken stock to the inner pot.
  2. Stir in 1 teaspoon of kosher salt, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, and ½ teaspoon of paprika.
  3. Add 16 ounces of elbow noodles, ensuring they are fully submerged in the broth.
  4. Secure the lid on the pressure cooker with the vent knob set to sealed.
  5. Cook on high pressure for 3 minutes using the manual or pressure cook option, adjusting the time as needed.
  6. After the cooking time is complete, let the pressure release naturally for exactly 5 minutes.
  7. Conduct a quick release of pressure by moving the venting knob to the venting position safely.
  8. Stir in ¼ cup of milk and mix well.
  9. Add the shredded cheese one handful at a time, stirring after each addition to ensure melting.
  10. Incorporate ¼ cup of sour cream and mix well.
  11. If needed, add additional milk a tablespoon at a time to achieve desired consistency.
  12. Taste and adjust seasoning with more salt or pepper as necessary, then serve.

Notes

For a richer flavor, consider adding smoked paprika.
This dish can be customized with your favorite cheeses or garnishes.
If you prefer a thicker consistency, reduce the amount of milk added.
