Description

These Maple Glazed Carrots are a delightful blend of sweet and savory, featuring fresh carrots, maple syrup, and a splash of lemon. Quick to prepare, they make a fantastic side dish for any meal, bringing a burst of flavor to your dinner table.


Ingredients

  • 1 pound carrots peeled and cut on the bias in 1/4" slices.
  • 1/2 teaspoon kosher salt
  • 3 tablespoons maple syrup
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon fresh lemon zest
  • 1/2 teaspoon fresh thyme leaves
  • black pepper to taste


Instructions

  1. Peel and slice the carrots on the bias into 1/4" thick slices.
  2. In a 12" sauté pan, combine chicken broth, sliced carrots, kosher salt, and 1 tablespoon of maple syrup. Bring to a boil over medium heat.
  3. Cover the pan, reduce heat to medium, and let simmer. Stir occasionally until the carrots are nearly tender, around 5-7 minutes.
  4. Remove the lid, increase the heat to medium-high, and continue simmering. Stir occasionally until the liquid reduces to about 2 tablespoons, approximately 2 minutes.
  5. Add the butter and the remaining 2 tablespoons of maple syrup. Toss the carrots until well coated and cooked through.
  6. Turn off the heat and stir in the lemon juice, lemon zest, and fresh thyme. Adjust seasoning with additional salt and black pepper as needed.

Notes

For a brighter flavor, add more lemon juice to your taste.
These carrots pair wonderfully with roasted meats or as part of a veggie platter.
