These Maple Glazed Carrots are a delightful blend of sweet and savory, featuring fresh carrots, maple syrup, and a splash of lemon. Quick to prepare, they make a fantastic side dish for any meal, bringing a burst of flavor to your dinner table.

- 1 pound carrots peeled and cut on the bias in 1/4" slices.
- 1/2 teaspoon kosher salt
- 3 tablespoons maple syrup
- 1/2 cup chicken broth
- 2 tablespoons butter
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon fresh lemon zest
- 1/2 teaspoon fresh thyme leaves
- black pepper to taste
Instructions
- Peel and slice the carrots on the bias into 1/4" thick slices.
- In a 12" sauté pan, combine chicken broth, sliced carrots, kosher salt, and 1 tablespoon of maple syrup. Bring to a boil over medium heat.
- Cover the pan, reduce heat to medium, and let simmer. Stir occasionally until the carrots are nearly tender, around 5-7 minutes.
- Remove the lid, increase the heat to medium-high, and continue simmering. Stir occasionally until the liquid reduces to about 2 tablespoons, approximately 2 minutes.
- Add the butter and the remaining 2 tablespoons of maple syrup. Toss the carrots until well coated and cooked through.
- Turn off the heat and stir in the lemon juice, lemon zest, and fresh thyme. Adjust seasoning with additional salt and black pepper as needed.
Notes
For a brighter flavor, add more lemon juice to your taste.
These carrots pair wonderfully with roasted meats or as part of a veggie platter.
