- 2 tbsp sundried tomato oil from jar (divided, or olive oil)
- 1 lb. chicken breasts (cut into 1-inch cubes)
- 1 tsp salt (divided)
- 1 tsp black pepper (divided)
- ½ onion (small dice)
- 4 garlic cloves (minced)
- ½ cup sundried tomatoes (packed in oil, thinly sliced)
- 2 tbsp tomato paste
- 2½ cups chicken broth
- 8 oz. penne pasta (uncooked)
- 1½ tsp italian seasoning
- ½ cup heavy cream (room temperature)
- ⅓ cup frozen spinach (thawed and pressed)
- ½ cup parmesan cheese (grated)
Instructions
- Gather and prepare all ingredients.
- In a large skillet or Dutch oven over medium-high heat, add 1 tablespoon of sundried tomato oil. Pat the chicken dry and season with ½ teaspoon of salt and ½ teaspoon of pepper.
- Once the oil is hot, add the chicken in an even layer. Cook undisturbed for 3 minutes, then flip and cook for another 3 minutes. Remove chicken and set aside.
- Reduce heat to medium, then add the remaining sundried tomato oil, onions, garlic, and sliced sundried tomatoes. Cook for about 3 minutes until onions soften.
- Stir in the tomato paste and cook for about 1 minute.
- Add chicken broth, penne pasta, remaining salt, pepper, italian seasoning, and the chicken along with its drippings. Stir to combine.
- Bring to a boil, then lower to a medium simmer. Cover and cook for 10 minutes.
- After 10 minutes, stir the ingredients to prevent sticking, then cover and cook for an additional 10 minutes.
- Check the pasta for doneness. If it's not fully cooked and the pan is dry, add a splash of chicken broth. Once cooked, turn off the heat.
- Stir in heavy cream and thawed spinach until warmed and well mixed.
- Sprinkle with fresh parmesan and serve.
Notes
Feel free to customize with your favorite vegetables or herbs.
For added richness, consider using additional parmesan in the pasta.
