Description

Ingredients

  • ¼ cup chia seeds
  • 1 cup yogurt (vegan coconut or Greek)
  • ½ cup milk (cashew or almond)
  • 2 tbsp maple syrup
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract
  • ¼ cup blueberries (frozen wild blueberries recommended)
  • ¼ cup chopped strawberries
  • ¼ cup pitted cherries
  • 2 tbsp raspberries


Instructions

  1. In a medium bowl, combine chia seeds, yogurt, milk, maple syrup, ground cinnamon, and vanilla extract. Whisk until well blended.
  2. If using large frozen strawberries, allow them to thaw slightly and chop them into smaller pieces before adding to the mixture.
  3. Stir in the berries until evenly distributed.
  4. Let the mixture sit for a few minutes so the chia seeds can absorb some liquid, then stir again.
  5. Cover the bowl with plastic wrap or transfer the mixture into jars. Refrigerate for at least 4 hours or overnight to thicken.
  6. When ready to serve, spoon the chia pudding into bowls and top with fresh berries, nut butter, yogurt, cinnamon, or any preferred toppings.

Notes

For an extra touch of sweetness, adjust maple syrup to taste.
Feel free to substitute any favorite berries as toppings.
