- 1 1/2 teaspoons fresh ground pepper divided
- 4 cloves garlic very finely chopped
- 2 tablespoons all-purpose flour
- 2 1/3 cups heavy cream
- 1 cup grated parmesan cheese add extra for topping if desired
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Bring a large pot of water to a boil, add salt, and cook the fettuccine until al dente according to package instructions.
- Drain the pasta and set aside in a colander, optionally adding some olive oil to prevent sticking.
- While the pasta cooks, heat olive oil and 1/4 cup of butter in a skillet over high heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides.
- Cover the skillet with a lid, reduce heat to medium, and cook for about 5 more minutes until the chicken is no longer pink in the center. Remove from the pan and cover with foil.
- For the sauce, melt the remaining 1/2 cup butter in a large skillet over medium heat, then add garlic and sauté for 30 seconds.
- Lower heat, stir in a bit of salt and pepper, then add flour, mixing quickly until it forms a paste.
- Slowly pour in heavy cream while stirring constantly until the sauce is smooth.
- Cook the sauce until steaming and thickened, then stir in 1/2 cup parmesan cheese until melted. Adjust seasoning as needed and remove from heat.
- When ready to serve, slice the chicken into strips, combine with the pasta in serving bowls, and generously drizzle Alfredo sauce on top.
- Garnish with chopped parsley and additional parmesan cheese before serving.
