These Oreo Cheesecake Bars combine rich cream cheese, crunchy Oreo pieces, and a buttery crust for an irresistible treat. Perfect for gatherings or a sweet finish to any meal, this easy recipe will satisfy your dessert cravings without the fuss.

- 3 packets original Oreos (42 cookies)
- ¼ cup salted butter, melted
- 450 g cream cheese, softened (16oz)
- ¾ cup white granulated sugar
- ½ cup sour cream, room temperature
- 2 large eggs, room temperature
- 3 teaspoons vanilla extract
Instructions
- Preheat the oven to 180C (160C fan forced) / 350F. Line a square 8-inch pan with baking paper.
- Roughly chop 14 Oreos (1 packet) and set aside.
- Blitz the remaining 28 Oreos in a food processor until fine crumbs form. Mix in the melted butter. Press the mixture into the base of the prepared pan using a spoon or your hands.
- In a large mixing bowl, beat the cream cheese and sugar with an electric mixer on medium speed until smooth.
- Add the sour cream, eggs, and vanilla. Blend until well mixed, ensuring to scrape down the sides of the bowl as needed.
- Transfer half of the cheesecake filling to a separate bowl and fold in half of the chopped Oreos.
- Spread the Oreo cheesecake mixture over the crust, then top with the remaining plain cheesecake batter.
- Scatter the leftover Oreo pieces on top.
- Bake for 35-40 minutes until a 2-inch border is set and the center is a bit wobbly.
- Allow to cool at room temperature for 1 hour, then refrigerate for 4-6 hours, covered with plastic wrap, before serving.
Notes
For a richer flavor, try using double-stuffed Oreos.
Letting the bars chill overnight enhances the taste and texture.
