Description

These Savory Sourdough Discard Crackers are bursting with flavor and made simply with sourdough discard, olive oil, and your favorite seasonings. Perfect for snacks or appetizers, they are easy to prepare and result in crunchy, delicious treats everyone will enjoy.


Ingredients

  • ¾ cup unfed sourdough discard room temperature
  • 1 cup all-purpose flour
  • ¼ cup + 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1½ teaspoons italian seasoning
  • 1½ teaspoons everything bagel seasoning
  • 1½ teaspoons rosemary and sea salt
  • 1½ teaspoons za'atar seasoning


Instructions

  1. In a medium bowl, mix sourdough discard, flour, olive oil, salt, garlic powder, and Italian seasoning until the dough is too stiff to mix.
  2. Knead the dough by hand in the bowl until a smooth ball forms; add a little olive oil if needed for moisture.
  3. Cover the bowl with plastic wrap and allow the dough to rest for 15-20 minutes.
  4. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  5. Divide the dough in half and roll each portion very thin on the parchment paper.
  6. Cut the rolled-out dough into squares or diamond shapes using a pizza cutter or knife.
  7. Bake the crackers for 20-25 minutes, rotating the pans halfway through for even browning, and remove any overcooked edges.
  8. Allow the crackers to cool completely on the baking sheet.

Notes

Store leftovers in an airtight container to maintain crispness.
