Description

This Spinach Pizza boasts an irresistible flavor and simple prep. Made with fresh spinach, creamy ricotta, and topped with delicious veggies, it’s a fantastic choice for a quick and healthy meal.


Ingredients

  • 1 ball best pizza dough (or thin crust dough)
  • 8 ounces frozen spinach
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/2 cup whole milk ricotta cheese
  • kosher salt
  • fresh ground black pepper
  • 1 handful sliced red onion
  • 1/2 jarred roasted red pepper (or fresh red bell pepper), diced
  • 1/2 small garlic clove (1/4 teaspoon minced)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese


Instructions

  1. Prepare the pizza dough according to your chosen recipe, allowing about 15 minutes for making and 45 minutes for resting.
  2. Preheat your oven to 500°F with a pizza stone inside, or use your pizza oven according to its instructions.
  3. Rinse the spinach under warm water, then squeeze out excess moisture. Combine with 1/8 teaspoon kosher salt, garlic powder, and oregano in a bowl.
  4. Mince garlic and mix it with ricotta, adding kosher salt and fresh ground pepper to taste.
  5. Slice the red onion thinly and dice the roasted red pepper.
  6. Once the oven is ready, dust your pizza peel with cornmeal or semolina flour. Stretch the dough into a circle, and gently place it onto the peel.
  7. Spread the seasoned ricotta over the dough, then layer the mozzarella, Parmesan, spinach, red onion, and red pepper on top.
  8. Carefully transfer the pizza onto the preheated stone using the pizza peel. Bake for 5 to 7 minutes in the oven (or 1 minute in a pizza oven) until the cheese is melted and the crust is golden. Slice and serve immediately.

Notes

Make sure the spinach is well drained to avoid a soggy pizza crust.
