- ¼ cup vegetable oil
- 1½ cups long grain white rice
- 1 garlic clove, minced
- ¼ cup finely diced yellow onion
- ¼ cup tomato sauce, about 4 ounces
- 2 teaspoons tomato bouillon
- ½ cup peas
- 1 teaspoon cumin
- ½ teaspoon kosher salt
- 3 cups vegetable broth, or water
Instructions
- Heat the oil in a large pan over medium-high heat.
- Add the rice to the hot oil, stirring continuously for 7-10 minutes until the rice is golden brown but not burnt.
- Stir in the minced garlic and diced onion, sautéing for 1 minute until fragrant.
- Incorporate the tomato sauce, tomato bouillon, peas, cumin, and salt into the mixture.
- Pour in the vegetable broth or water and stir gently.
- Cover the pan, lower the heat, and let it simmer for about 20 minutes until the rice is cooked and the liquid is mostly absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork before serving.
Notes
For a bit of heat, consider adding diced jalapeños or a pinch of cayenne pepper.
This dish pairs wonderfully with black beans or grilled vegetables as an easy side.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
