Description

This Waldorf Chicken Salad is a wonderful combination of tender chicken, crunchy apples, sweet grapes, and creamy mayonnaise. Perfect for a quick, healthy lunch or a satisfying dinner, it’s packed with flavor and easy to prepare in just 10 minutes.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1/2 cup sliced celery
  • 1/4 cup chopped pecans
  • 1/2 cup chopped green apple
  • 1/2 cup quartered red grapes
  • 1/2 cup mayonnaise
  • 1/2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Place the chicken breasts in a saucepan and cover them with cold water.
  2. Bring the water to a boil on the stove.
  3. Once boiling, lower the heat to a simmer and cover the pot.
  4. Allow the chicken to simmer for 14 minutes, then remove it from the pot and let it cool.
  5. While the chicken is cooking, chop the celery, apples, pecans, and grapes.
  6. In a large mixing bowl, combine mayonnaise, lemon juice, salt, and pepper.
  7. After the chicken has cooled, cube it and add to the mixing bowl.
  8. Add the chopped celery, pecans, apples, and grapes to the mixing bowl.
  9. Stir the ingredients together until fully mixed and coated in the mayonnaise mixture.

Notes

For added flavor, consider using grilled chicken instead of boiled chicken.
This salad can be served on a bed of lettuce or as a filling in sandwiches.
