Ingredients

  • 1.5 cups (220 g) finely grated zucchini, do not drain liquid out
  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (180 g) all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup chopped walnuts
  • 1 cup (113 g) confectioner's sugar
  • 1 tablespoon whole milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9 square pan with parchment paper or grease it lightly.
  2. In a large bowl, combine the grated zucchini (without squeezing out the liquid), granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined and set aside.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Create a well in the dry mixture and pour in the wet ingredients. Mix gently until just combined.
  5. Fold in the chopped walnuts until evenly distributed.
  6. Transfer the batter into the prepared pan and bake uncovered for 22-26 minutes, or until the center reaches 200°F and springs back when gently pressed.
  7. Allow the bars to cool to room temperature.

Notes

Feel free to substitute the walnuts with chocolate chips for a sweeter twist.
For extra moisture, consider adding a half cup of applesauce to the batter.
These bars can be stored in an airtight container for up to a week.
