- 1.5 cups (220 g) finely grated zucchini, do not drain liquid out
- ¾ cup (150 g) granulated sugar
- ½ cup (100 g) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups (180 g) all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ½ cup chopped walnuts
- 1 cup (113 g) confectioner's sugar
- 1 tablespoon whole milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×9 square pan with parchment paper or grease it lightly.
- In a large bowl, combine the grated zucchini (without squeezing out the liquid), granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined and set aside.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Create a well in the dry mixture and pour in the wet ingredients. Mix gently until just combined.
- Fold in the chopped walnuts until evenly distributed.
- Transfer the batter into the prepared pan and bake uncovered for 22-26 minutes, or until the center reaches 200°F and springs back when gently pressed.
- Allow the bars to cool to room temperature.
Notes
Feel free to substitute the walnuts with chocolate chips for a sweeter twist.
For extra moisture, consider adding a half cup of applesauce to the batter.
