- 2 ½-3 pounds pork loin not tenderloin
- 10-12 slices bacon
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon smoked salt
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 teaspoon dried thyme or rosemary optional
- kitchen twine optional, for securing bacon
Instructions
- Preheat oven to 425° F. Line a rimmed baking sheet with foil and place a rack on top.
- Pat the pork loin dry with paper towels and rub all over with olive oil.
- In a small bowl, mix kosher salt, smoked salt, garlic powder, black pepper, and optional herbs. Rub this seasoning evenly over the pork loin.
- Weave bacon slices in an over-under pattern on a cutting board, forming a rectangle. Place pork on one end and roll to cover it with bacon. Secure with kitchen twine, if using.
- Place the bacon-wrapped pork seam-side down on the rack in the baking sheet.
- Roast at 425°F for 15 minutes, then reduce the temperature to 375°F for 50-60 minutes, or until the internal temperature reaches 140°F in the thickest part.
- Remove from the oven and let rest for 10 minutes until it reaches 145°F before slicing.
Notes
For extra flavor, add your favorite herbs to the seasoning mix.
